Herr Alfred Merkel has worked at Marriott Marquis Queen’s Park in Bangkok for almost a decade. Over time, he’s perfected his craft as head pastry chef at Goji Kitchen. Today, I had tiramisu, mousse, coconut milk ice cream, coconut cake, and mango potted cream. The dessert section is so popular, when the last piece of a whole cake is displayed, some patrons run to the counter to claim it. One woman raced for the last slice of mango cheesecake during closing time, and after securing the prize, beamed more brightly than a kid at Disneyland.
The creative highlight might be the latte macchiato panna cotta, which comes in a miniature-sized glass. It’s impossible to hold and not feel amazed, and perhaps that’s what good food is all about: appreciation. Danke schoen, Alfred Merkel!
